Boxed Lunches or Platters ($10 - $14 each)
Boxed lunches or platters of sandwiches can be creative and affordable. I love doing different variations of wrap sandwiches, or entree salads with fresh, healthy ingredients. Lunches can be vegan, vegetarian or with grilled chicken or tuna salad.
Here is just a sample of lunch choices:
Sandwiches (served w/fresh fruit &
healthy oatmeal chocolate chip cookies)
Mediterranean Wrap: Hummus, red pepper spread, artichoke hearts, cucumber, bell peppers, tomatoes & fresh spinach, wrapped in a whole wheat tortilla. Vegan, or vegetarian with feta, or add feta & seasoned grilled chicken.
Southwest Wrap: Seasoned black beans, bell peppers, jicama, guacamole & fresh spinach, wrapped in a whole wheat tortilla. Vegan, or vegetarian with feta or add feta & chili/cumin rubbed grilled chicken.
Asian Tuna Wrap: Chunk light tuna seasoned w/rice vinegar, soy sauce & ginger, mixed w/pea pods, red peppers & spinach, wrapped in a whole wheat tortilla.
Smoked Turkey Wrap: Thinly sliced smoked turkey, red pepper spread, cucumber & fresh spinach in a whole wheat tortilla.
Entree Salads
Southwest Salad: Mixed greens, black beans, red bell peppers, tomatoes, feta & cucumber, served with a fresh avocado/lime juice dressing. Vegetarian, or add chili/cumin rubbed grilled chicken.
Mediterranean Salad: Mixed greens, artichoke hearts, cannellini beans, tomatoes, feta, cucumber & calamata olives, served with red wine vinaigrette. Vegetarian, or add seasoned grilled chicken or light tuna salad.
Fresh Fruit Salad: Mixed greens w/seasonal fresh fruit, walnuts, white cheddar, carrots, cucumber & white balsamic/honey vinaigrette. Vegetarian, or add citrus rubbed grilled chicken or light tuna salad.
Parties
I love parties, and I love cooking for them too. Though I still lean toward lots of healthy choices, parties can be a time for a little decadence. I am happy to meet with you to design a customized menu for your party.
